French vanilla isn't a different variety of vanilla bean, but rather a style made with an egg-yolk custard base, giving it a richer texture and yellowish hue.
Many ice cream lovers are familiar with Thomas Jefferson’s historic vanilla ice cream recipe. The third U.S. president likely developed his passion for the flavor while serving as a minister in France. Known for carefully recording recipes, Jefferson penned a handwritten draft for vanilla ice cream in the 1780s—one of the earliest recorded recipes in American history. Today, the Library of Congress preserves an original copy (which happens to feature a cookie recipe on the reverse side). Want to try it yourself? The ice cream parlor at Mount Rushmore in South Dakota still serves Jefferson’s original recipe today.
